If Mumbai hosted home baking contests, Zarine Davar’s comforting Brie and onion pie would win on the merit of its pliant butter-enriched crust and cheesy filling. The pie is a great showcase for The Spotted Cow Fromagerie’s luscious take on Brie, complemented by mildly sweet onions.
The home cook from Cuffe Parade heads Mama Z’s, a month-old food takeaway service that caters sweet and savoury pies and dessert jars. Davar has a vast repertoire of dishes across cuisines, but Mama Z’s menu only lists three. She was long opposed to the idea of cooking commercially and launched the takeaway at the behest of her two daughters. Their plan is to grow the business gradually. Next week, the menu will be expanded to include spinach and artichoke dip, chicken liver parfait and tiramisu.
Each of her three dishes, Brie and caramelised onion pie; banoffee pie; and chocolate and caramel pie, stoked our appetite for more from her kitchen. Her “secret” salted caramel is common to the banoffee pie and chocolate and caramel pie, which are sold in jars. If she sold the well-balanced, thick caramel on its own, we would stock pots of it like we do ice cream for rotten days.
The two textured no-bake desserts are smushed into 150ml and 750ml jars. The chocolate jar was a simple yet satisfying assembly of compatible ingredients such as biscuit crumb, caramel, dark Callebaut ganache, whipped cream and more caramel. The banoffee was equally homely and comprised the perfect balance of cream, caramel, biscuit and banana.
The 150ml dessert jars are priced at Rs350 each and 750ml jars at Rs950 for the banoffee pie and Rs1,050 for the chocolate pie.
